This division of the business handles the operation of the institutional cafeterias. Since 1983, the Company has held the contract for the Mobil Oil cafeteria. In 1998, Moncla’s was awarded the operating contracts of two more cafeterias: Goodyear Tire & Rubber in Beaumont and Northrop Grumman in Lake Charles. The cafeterias provide their employees with a full-line breakfast and lunch, consisting of a complete hot-food line, short-order line, and deli area. The cafeterias also provide catering inside the plants for meeting, receptions, events, and emergency purposes.

Today, Moncla’s still carries on the tradition of providing quality food established by Gaston Moncla over 80 years ago. In producing consistent quality products, his basic approach is still used. The commissary produces food to support the catering, vending, and institutional cafeterias. For the catering, the commissary produces all of the various menus for parties, averaging ten functions per day. For vending, the commissary produces fresh food products for the food machines. These items include fresh sandwiches, salads, and desserts all packaged and labeled for the vending machines. For the institutional cafeterias, the commissary provides prepared food products such as salad products, homemade rolls, chicken fried steaks, etc.
